Easy Baked Chicken Recipes



A package of skinless, boneless chicken can be used in hundreds of different ways. Deciding to have chicken for dinner is only the first step.

Because I'm a simple cook, the following easy baked chicken recipes are extremely basic. Also understand I've descovered the following baked chicken recipes that I'm about to share from trial and error. When I pull out a package of frozen chicken breasts from the freezer, I have no idea what I'll make until I actually start cooking.

My first step to finding ingredients is seeing what I've got that could possibly go with easy baked chicken recipes. I make a mental note of what I've got, and then I might glance through my cookbooks. While I may not use any of the baked chicken recipes in my cookbook, I sometimes use them as a start to come up with an easy baked chicken of my own.

The following easy baked chicken recipes are ones I use often. You can make them "as is", or use them to come up with your own easy baked chicken.



Easy Baked Chicken & Garlic


4 Skinless, boneless chicken breasts
About 1 stick of butter
Garlic, chopped
1 Jar sliced mushrooms

Arrange chicken in baking dish. Cut butter in slices and arrange on top of chicken evenly. Add garlic and mushrooms. Cook at 400* for about 45 mins.

Possibly the easiest of the baked chicken recipes, but one of our favorites. You can add just about anything you like to this recipe. (See additional ingredient suggestions below)

Easy Cheesy Baked Chicken

2 Skineless, boneless chicken breasts
Garlic, chopped
1 Jar Sliced mushrooms
1 can cream of chicken soup
1 can of corn

Place chicken in baking dish, arrange rest of ingredients on top. Cook at 400* for about 45mins

This easy baked chicken recipe is often called our "poor man recipe". Great to use if you've used only half a package of chicken for something else, and need to "finish it off". This recipe was actually created one night when we had only 1 boneless chicken breast left with no other possiblities for a main dish. It proved to be a better easy baked chicken recipe with another piece later on, but it showed me you can add just about anything that sounds good to a chicken meal. It was perfect for using up some of those odd cans in the pantry!

Easy Crockpot Chicken

4 Chicken Breasts
1 Can Black Beans
1 Can Corn
1 Jar Salsa
Layer in crockpot in the order given. Bake 6-8 hours. 30 minutes before done top with small package of cream cheese (can be low fat or fat free) and let it finish cooking. Serve with Tortillas. Easy, delicious & fast!


Sauteed Chicken Breasts with Fresh Sage

4 skinless and boneless chicken breast halves (each 6 ounces)
3 tablespoons freshly squeezed lemon juice
5 tablespoons extra virgin ollive oil
28 fresh sage leaves
3 tablespoons unsalted butter
sea salt and freshly ground black pepper to taste
2 lemons, halved, for garnish

Place the chicken breasts in a glass baking dish. Add the lemon juice, 3 tablespoons of the oil, and the sage leaves. Turn the chicken to coat evenly, cover and set aside at room temperature for 30 minutes.

Remove the chicken from the marinade and pat dry. Strain the marinade into a small bowl; reserve the sage leaves separately.

In a large skillet, melt the butter in the remaining 2 tablespoons of oil over moderately high heat until hot and bubbly. Add the chicken breats, smooth side down, and cook until evenly browned, about 5 minutes. Turn the breasts, and season the cooked side generously with salt and pepper. Tuck the reserved sage leaves around the chicken and cook until the chicken is browned on the bottom and just white throughout, but still juicy, 5 to 10 minutes more. Do not scorch the sage.

Remove the skillet from the heat. Transfer the chicken to a cutting board and season the bottom side of the chicken breasts on the bottom side with salt and pepper. Slice the breats on the diagonal into thick slices, and arrange on a warmed serving platter. Place the sage leaves over the chicken. Cover loosely with foil.

Discard the fat from the skillet. Heat the skillet over moderately high heat until hot. Add the reserved marinade and stir with a wooden spoon, scraping up the brown bits from the bottom of the pan. The sauce will boil almost immeidately. As soon as it reduces to a brown glaze (less than one minute), pour the sauce over the chicken. Garnish with the lemon halves. Serve immediately.
