

Pumpkin Recipes
A typical Halloween tradition for almost any kid is of course carving pumpkins. While not the most expensive item, if you have several creative kids the cost of decorations may start to add up.
You could grow your own pumpkins, but as this takes up quite a bit of space it might not be ideal. You're other option? Making the most out of the pumpkin as you possibly can by using it for pumpkin recipes.
If you carve the pumpkin, you can't make pie out of it. Nor would you want to, since the best pies are made from small pumpkins (and the best pumpkins to carve are the big ones!). Although what you can still use is the seeds - regardless of what you do with the rest.
Pumpkin Seeds
One of my favorite pumpkin recipes is also one of the easiest. No matter if we use no other pumpkin recipes, we always at least use the seeds.
Once your pumpkin is carved and seeds set aside, soak seeds in bowl of water and salt to remove any loose pumpkin "guts". Lay out pumpkin seeds on pan to dry. Grease pan with butter, and use spray butter for the top of the seeds (You can also melt butter and pour over top of seeds). Sprinkle with garlic salt and bake for 5-10 mins at 350* or until seeds are golden brown. You can also try other seasoning on this Halloween treat. Eat & enjoy!
Pumpkin Pie
If you aren't going to carve the pumpkin, why not make some pie? You can still use the pumpkin as decoration for a little while, just don't let it sit too long. When your done using it on your front steps, cut the pumpkin in half (like cutting off the top like you would for decorating, except half way into the pumpkin). Put each half in a baking pan with 1/2 inch water and cook for 400* for an hour or more, until the pumpkin is tender.
Home Made Pumpkin Pie
Ingredients:
2 cups stewed pumpkin (slightly drier consistency than applesauce)
2 eggs
2/3 cup brown sugar
1 1/4 cups of whole milk or half-and-half
pinch salt
pinch pepper
2 Tablespoons butter
2 teaspoons maple syrup
1 teaspoon cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
9 inch pie pan filled with your favorite crust
Preparation:
Cut pumpkin into slices 2 inches thick and pare off the skin. Dice the
skinned pumpkin into 2 inch cubes, add to a skillet, and add enough
water to steam. For a 10 pound pumpkin in a 12 inch skillet, we used 1
cup of water. Cover the skillet and steam on a medium heat for several
hours. Keep an eye on the amount of water remaining and when it
becomes soft mash it down. Remove the cover from skillet and then when
it reaches the texture of applesauce, let it dry out another 10 minutes
on a low heat. Measure out 2 cups and put into a bowl. Add 2 T butter
to warm pumpkin puree and let it melt.
Preheat oven to 425 degrees (F).
In another bowl, beat the eggs well and beat in brown sugar, milk,
salt, pepper, maple syrup, spices and finally the pumpkin mixture.
Pour this into the pie shell and place in center oven rack at 425
degrees for 10 minutes. Reduce heat to 350 degrees and continue to
bake until the custard is firm. This should take a total of forty
minutes in all. Cool and serve.
Pumpkin Chess Pie
4 lg eggs
2 c sugar
1 c heavy cream
1 c butter, melted
1 tb flour
1/2 c pumpkin, mashed
1/2 tb vanilla
9" unbaked pastry
Heavy cream, whipped
Preheat oven to 350F.
In large mixing bowl, combine eggs, sugar, cream butter, flour,
pumpkin and vanilla. Mix until well blended and smooth Pour into
pastry crust. Bake for 40 minutes or until firm.
Decorate with whipped cream and chill if desired.
